Work all together to a smooth dough, knead 5 mins ( 6 mins on kneading speed in the Thermomix).

Cover dough and allow to rest in a warm place for 20 mins. It will double in size.

Preheat oven to 170 deg C

Divide dough into 25-30g pieces, roll out by hand to form long very thin sticks, roll finally in grated parmesan, and place on trays leaving a 2cm gap in-between. Allow to prove again, then bake for approx. 15 mins until golden and crisp.
